Our 2022 Harvest

THE HARVEST

"The grape has done its work

The grape is ripe,

The berries are round and smooth.

Not too much, not too little

Not enough yesterday, passed tomorrow

Everything is tension, balance, maturity.

The winegrower can read between the vines:

Today is harvest day."

The intregrality of our grapes are cut by hand

by our harvesters.

Once their bucket is full, the porters dump it

The pinot noir will then be hand-sorted.


 

   

 

 

 

 

A part of our pinot noir will be used to make our Côteaux Rouge Champenois.

The latter is sorted manually (destemmed) then stored in wooden barrels to macerate for 12 to 14 days.
